Firesides cocktail cuisine has fresh interpretation of classic comfort food and features a creative collection of sharable selections. The atmosphere is casual yet sophisticated and perfect for any event. We are currently in search of an Chef de Cuisine. Primary Responsibilities: * Reports directly to the Executive Chef * Responsible for maintaining food quality and ensuring guest satisfaction * Work closely with the Executive Chef in menu development and presentation * Responsible along with Executive Chef in maintaining overall food & labor cost within budgetary guidelines * Maintain standards of hygiene throughout the kitchen * Must be actively involved in monitoring staff performance * Set standards and maintain food presentation quality in the restaurant at all times * Execute all production and plating in a timely, efficient manner and to meet and exceed guest expectations * Remain on top of culinary trends & seek always to improve * Responsible for scheduling of staff in the and stewarding team ensuring that schedules are posted per union contract deadlines * Ensure that proper par stocks of all food items are maintained * Must always be well groomed and in proper uniform and be role model to all staff * Motivate staff and maintain discipline at all times * Ensure all goods meet company quality specifications and reject those items that do not * Ensure that all cook and hold temperatures of meats and sauces are maintained as per company guidelines * Ensure that standard recipes are being followed at all times * Liaise with restaurant manager and service staff regarding service issues * Other duties as assigned Requirements: * Must have two years experience in similar setting including four diamond or A la Carte experience * Flexible with schedule including extended hours to include nights weekends and holidays * Must be competent in culinary creativity as demonstrated by test cooking * Must also be an experienced supervisor with a focus on sanitation * Excellent knowledge of current culinary trends * Ability to prepare a variety of cuisine, using skill and creativity to develop new menus * Teach all associates the importance of consistency in preparation and presentation * Strong knowledge of food cost and inventories * Must possess the ability to handle large banquets * Candidate must have good knowledge of computers (i.e.: Excel and Word) * Clear, concise written and verbal communication skills * Must have a good understanding of cost controls * Must have NYC food handlers certificate * Experience in a union environment preferred If you are interested in this opportunity, please apply on-line including your cover letter, resume and salary requirements.
