Job Description

Responsible for the successful culinary operation reporting to the Director.  Serves as the department head for culinary operations with duties that include the food production for cafes, retail operations and catering functions.  Adheres to HACCP guidelines to ensure efficient, safe and sanitary food production, preparation and presentation.  Duties also include menu development, inventory, purchasing, labor and food cost controls, maintaining sanitation standards, and personnel management to include hiring, coaching, counseling, training and developing.

Recipe to Succeed:

* Superior leadership, training & team building skills * Strong culinary credentials in a comparable upscale, high volume operation * Proper handling, preparation and storage of perishable products * Excellent organizational and communication skills, both written and verbal * Ability to communicate on various levels to include management, departmental, customer and staff * Strong labor and food control practices * Knowledge of safe and sanitary food handling principles * Ability to  lift, bend and carry up to 40 lbs.

Necessary Ingredients:

* B.S. Degree in Food Services Technology/Management/or related field; or A.O.S. Degree in Culinary Arts or culinary * Minimum of 5 years of progressive culinary/kitchen management experience, depending upon formal degree or training * Related experience in upscale, high volume food service operations * Strong catering experience required * Strong  knowledge of current food and catering trends with a focus on using quality goods, production, sanitation, food cost controls, and presentation * Proficient computer skills to include; various computer programs, Microsoft Office programs, e-mail and the Internet * Food Handlers Certification
