Mountain Creek Job Description Job Title: Chef Steward/F&B Manager Resort: Mountain Creek Reports To: Director of Hospitality Operations Department/Division: Food and Beverage Last Updated: August 5, 2009 Location: Vernon, NJ JOB SUMMARY: * The Chef Steward ensures a quality food & beverage experience for all Mountain Creek guests at all Mountain Creek locations. This will include; effective menu design, hiring, training and maintaining staff, procurement, inventory control, product availability, safety & sanitation. The Chef Steward will take an active roll in the day to day operation to ensure all areas are operating to standard. ESSENTIAL FUNCTIONS: * Effectively design menus for quality, variety and profitability * Ensure all kitchens are functioning to standard * Coach all kitchen staff to ensure quality dining experience * Manage daily labor and product usage. * Assess, analyze and adjust daily staffing levels to ensure profitability and achieve service standards. * Consult with Director of Hospitality, Business Unit Supervisors and Warehouse Lead on a daily basis for Business Unit needs. * Maintain inventory and COGS * Promote and enforce company policies and procedures. JOB QUALIFICATIONS: * Demonstrated knowledge of local health department food sanitary codes (Food Safe Cert) * Ability to communicate, promote and reinforce Intrawest Values, Culture, and Vision of success. * Proven Microsoft Office Skills / Experience with Micros system management preferred. * Able to read, write, and speak English to a 12th grade level * 3+ years experience in food production, kitchen management, and purchasing in a high volume bar/restaurant and food court operations. * Must be able to work a flexible schedule including nights, weekends and holidays * Must be able to stand for long periods of time. * Must be able to bend, twist, reach and lift up to 50lbs. * Proven experience in developing successful teams.
