Job Description

Reporting to the Executive Chef, the successful candidate will be responsible for the successful sushi production and operation.  Duties include but not limited to preparation, set-up and break down of sushi station, production and ordering.  Responsible for handling, preparation and storage of perishable products.  Must adhere to HACCP guidelines to ensure efficient, safe and sanitary food production.

Recipe to Succeed:

* * Good supervisory, leadership, management and coaching skills * Previous experience in preparation and production of sushi in high volume operations * Ability to communicate on various levels to include management, departmental, customer and staff * Knowledge of safe and sanitary food handling principle

Necessary Ingredients:

*

* Minimum of 3 years related experience in upscale sushi operations

* Previous experience in preparation and production of sushi in high volume operations

* Excellent knife skills

* Knowledge of safe and sanitary food handling principles

* ServeSafe or Department of Health certification a plus
